Speaking of anthocyanins, it would be appropriate to mention the miracle of Black Carrot, which has a high anthocyanin content.

Black Carrot gets its color from the phytochemical substance called anthocyanin, which acts as a strong antioxidant for the separation of harmful free radicals in the body. Due to the abundance of these pigments in carrots, the color of the product is dark and called black.

In this case, it would be more appropriate to consume it as a fresh vegetable if possible in order to get maximum efficiency.
